The world renowned Parmigiano Reggiano is one of the finest hard cheeses in the world. It holds protected DOP status, meaning it must be made in a specific region of Italy and with only three ingredients: milk, salt, and rennet. It is aged a minimum of 24 months and has a complex, savory flavor. Many Parmigiano cheeses may be aged as low as 12 months or more than 72 months. 24 months is the "sweet spot" of Parmigiano aging.
Uses: Pair with wine, serve drizzled with balsamic vinegar, served with cured meats, grate or shred to finish pasta, risottos, and soups, or mix it into sauces.
